{"id":16485,"date":"2026-01-10T14:42:36","date_gmt":"2026-01-10T12:42:36","guid":{"rendered":"https:\/\/www.es-recetas.top\/?p=16485"},"modified":"2026-01-10T14:42:36","modified_gmt":"2026-01-10T12:42:36","slug":"pastel-de-tres-leches","status":"publish","type":"post","link":"https:\/\/www.es-recetas.top\/?p=16485","title":{"rendered":"PASTEL DE TRES LECHES\u00a0"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Ingredientes (para 1 refractario mediano, aprox. 23\u00d733 cm):<br>5 huevos (separados: claras y yemas)<br>1 taza (200 g) de az\u00facar, dividida (\u00be taza + \u00bc taza)<br>1 cucharadita de vainilla<br>1 taza (125 g) de harina de trigo<br>1 cucharadita de polvo de hornear<br>1 pizca de sal (opcional, ayuda a realzar sabor)<br>1 lata de leche condensada (\u2248 397 g)<br>1 lata de leche evaporada (\u2248 354 ml)<br>1 taza (240 ml) de leche entera<br>Para decorar: 1\u00bd\u20132 tazas de crema para batir (bien fr\u00eda) + 2\u20133 cucharadas de az\u00facar (al gusto) + \u00bd cucharadita de vainilla, y canela molida (opcional)<br>Preparaci\u00f3n:<br>1. Precalienta el horno a 175 \u00b0C y engrasa ligeramente un refractario de vidrio de 23\u00d733 cm (tip: si usas mantequilla y una capita m\u00ednima de harina, se desmolda m\u00e1s f\u00e1cil si lo necesitas).<br>2. Tamiza harina, polvo de hornear y sal, y reserva (tip: tamizar evita grumos y deja el bizcocho m\u00e1s aireado).<br>3. Bate las claras a punto de nieve suave y ve agregando \u00be taza de az\u00facar poco a poco hasta lograr picos firmes y brillantes (tip: bowl y batidores sin grasa para que monten bien).<br>4. A\u00f1ade las yemas y la vainilla a las claras batidas e integra con movimientos envolventes o a velocidad baja solo lo necesario para no bajar el aire.<br>5. Incorpora la mezcla de harina en 2\u20133 tandas con esp\u00e1tula, envolviendo con suavidad hasta que no se vean restos secos (tip: no sobremezcles o el pastel quedar\u00e1 denso).<br>6. Vierte la mezcla en el refractario y hornea 25\u201335 min hasta que al insertar un palillo salga limpio o con migas secas (tip: evita abrir el horno antes de los 20 min para que no se baje).<br>7. Deja enfriar 10 min y pica toda la superficie con un tenedor o palillo (tip: pica m\u00e1s en el centro para que absorba parejo).<br>8. Mezcla leche condensada, leche evaporada y leche entera hasta integrar, y vierte lentamente sobre el pastel tibio en 3\u20134 tandas esperando a que se absorba entre cada una (tip: si lo ves \u201cflotando\u201d, espera; se va empapando con el reposo).<br>9. Cubre y refrigera m\u00ednimo 4 horas, ideal toda la noche, para que quede bien jugoso y uniforme (tip: este reposo es la clave de un tres leches perfecto).<br>10. Bate la crema para batir bien fr\u00eda con el \u00bc taza de az\u00facar (o al gusto) y vainilla hasta picos suaves a firmes (tip: si te pasas se corta, as\u00ed que detente cuando sostenga forma pero se vea cremosa).<br>11.
