Precalienta el horno a 160 \u00b0C y forra un molde rectangular con papel encerado dejando que sobresalga por los lados, esto ayuda a desmoldar sin da\u00f1ar el bizcocho.<br>2. Calienta ligeramente la miel con la leche hasta que est\u00e9 tibia (no hirviendo) y reserva, esto ayuda a lograr la textura h\u00fameda caracter\u00edstica del castella.<br>3. Coloca los huevos en un bowl grande, a\u00f1ade el az\u00facar y bate con batidora el\u00e9ctrica durante 8\u201310 minutos hasta obtener una mezcla muy espesa, p\u00e1lida y con efecto \u201clist\u00f3n\u201d, este paso es clave para que el bizcocho suba sin polvo de hornear.<br>4. Incorpora la vainilla y la mezcla de miel con leche, mezclando suavemente con esp\u00e1tula en movimientos envolventes para no perder el aire.<br>5. Tamiza la harina directamente sobre la mezcla en dos o tres partes e int\u00e9grala con movimientos envolventes y delicados, evitando mezclar de m\u00e1s para conservar la esponjosidad.<br>6. Vierte la mezcla en el molde, alisa la superficie y golpea suavemente el molde contra la mesa una o dos veces para eliminar burbujas grandes.<br>7. Hornea durante 45\u201355 minutos a 160 \u00b0C hasta que la superficie est\u00e9 dorada y al insertar un palillo salga limpio, si se dora demasiado r\u00e1pido puedes cubrir ligeramente con papel aluminio.<br>8. Retira del horno y deja reposar 10 minutos, luego desmolda con cuidado y envuelve el bizcocho a\u00fan tibio en pl\u00e1stico para mantener la humedad, este reposo mejora mucho la textura.<br>9.
