{"id":16993,"date":"2026-01-30T14:48:40","date_gmt":"2026-01-30T12:48:40","guid":{"rendered":"https:\/\/www.es-recetas.top\/?p=16993"},"modified":"2026-01-30T14:48:40","modified_gmt":"2026-01-30T12:48:40","slug":"feijoada","status":"publish","type":"post","link":"https:\/\/www.es-recetas.top\/?p=16993","title":{"rendered":"FEIJOADA\u00a0"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">&nbsp;plato nacional de Brasil!&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ingredientes:<br>500 g de frijol negro seco<br>300 g de carne seca o tasajo (opcional)<br>200 g de costilla de cerdo en trozos<br>200 g de panceta o tocino<br>2 chorizos o lingui\u00e7a en rodajas gruesas<br>1 cebolla grande picada fina<br>4 dientes de ajo picados<br>2 hojas de laurel<br>Sal al gusto<br>Pimienta negra al gusto<br>1 cucharadita de comino (opcional)<br>Agua o caldo (cantidad necesaria)<br>Preparaci\u00f3n:<br>1. Lava los frijoles y d\u00e9jalos en remojo con abundante agua durante 8\u201312 horas (esto reduce el tiempo de cocci\u00f3n y mejora la digesti\u00f3n).<br>2. Si usas carne seca o tasajo, rem\u00f3jala aparte durante 8 horas cambiando el agua 2\u20133 veces para desalarla y luego c\u00f3rtala en trozos medianos.<br>3. En una olla grande, coloca los frijoles escurridos, c\u00fabrelos con agua limpia, a\u00f1ade las hojas de laurel y cocina a fuego medio durante 40\u201350 minutos hasta que comiencen a ablandarse (si usas olla a presi\u00f3n, bastan unos 20 minutos).<br>4. En una sart\u00e9n amplia, dora la panceta o el tocino a fuego medio hasta que suelte su grasa y est\u00e9 ligeramente crujiente, lo que aportar\u00e1 sabor profundo a la feijoada.<br>5. A\u00f1ade las costillas de cerdo a la misma sart\u00e9n y d\u00f3ralas bien por todos lados para sellarlas y potenciar su sabor.<br>6. Incorpora el chorizo o lingui\u00e7a y sofr\u00ede brevemente hasta que est\u00e9 dorado y arom\u00e1tico, evitando que se seque en exceso.<br>7. Agrega la cebolla picada y sofr\u00ede a fuego medio-bajo hasta que est\u00e9 transparente y ligeramente caramelizada, removiendo para que no se queme.<br>8. Incorpora el ajo picado, el comino (si lo usas) y la pimienta, y cocina 30\u201340 segundos hasta que suelten su aroma, cuidando que el ajo no se dore demasiado.<br>9. Vierte todo el sofrito con las carnes dentro de la olla de los frijoles, mezcla bien y a\u00f1ade agua o caldo caliente hasta cubrir generosamente (el l\u00edquido debe sobrepasar unos 3\u20134 cm).<br>10. Cocina a fuego bajo durante 1\u00bd\u20132 horas, removiendo de vez en cuando, hasta que los frijoles est\u00e9n muy tiernos y el caldo espeso y oscuro (si se seca demasiado, a\u00f1ade m\u00e1s agua caliente poco a poco).<br>11. Ajusta de sal al final de la cocci\u00f3n, ya que las carnes aportan salinidad, y retira las hojas de laurel antes de servir para evitar sabores amargos.<br>12. Deja reposar la feijoada al menos 15\u201320 minutos antes de servir para que los sabores se asienten y el guiso tome mejor cuerpo.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp;plato nacional de Brasil!&nbsp;
