{"id":17056,"date":"2026-02-02T13:18:53","date_gmt":"2026-02-02T11:18:53","guid":{"rendered":"https:\/\/www.es-recetas.top\/?p=17056"},"modified":"2026-02-02T13:18:53","modified_gmt":"2026-02-02T11:18:53","slug":"pizza-estilo-nueva-york","status":"publish","type":"post","link":"https:\/\/www.es-recetas.top\/?p=17056","title":{"rendered":"PIZZA ESTILO NUEVA YORK\u00a0"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Ingredientes<br>Para la masa (1 pizza grande de 30\u201335 cm):<br>500 g harina de fuerza (panadera)<br>300 ml agua (templada, aprox. 30\u201335 \u00b0C)<br>3 g levadura seca (o 9 g levadura fresca)<br>10 g az\u00facar<br>10 g sal<br>1 cda (15 ml) aceite de oliva<br>Para la salsa:<br>400 g tomate triturado (o passata)<br>1 diente de ajo muy picado o 1\/2 cdta ajo en polvo (opcional)<br>1 cdta or\u00e9gano seco<br>1\/2 cdta az\u00facar (opcional, para equilibrar acidez)<br>1 cda aceite de oliva<br>Sal al gusto<br>Para el queso y acabado:<br>250\u2013350 g mozzarella baja humedad, rallada (ideal para \u201cNY style\u201d)<br>1\u20132 cdas parmesano rallado (opcional)<br>Or\u00e9gano seco o albahaca (opcional)<br>Pepperoni (opcional)<br>Harina o s\u00e9mola fina para estirar y lanzar (un poco)<br>Preparaci\u00f3n<br>1. Mezcla el agua templada con el az\u00facar y la levadura, remueve y deja 5\u201310 min hasta que espume (si no espuma, la levadura puede estar vieja o el agua demasiado caliente).<br>2. En un bol grande a\u00f1ade la harina y la sal, haz un hueco, vierte la mezcla de levadura y el aceite, y mezcla hasta formar una masa.<br>3. Amasa 8\u201310 min hasta que est\u00e9 lisa y el\u00e1stica (si se pega mucho, a\u00f1ade harina de a poquitos; si est\u00e1 dura, moja tus manos en agua y sigue).<br>4. Forma una bola, ponla en un bol aceitado, tapa y deja fermentar 1\u20132 h hasta que doble (para m\u00e1s sabor, fermenta 24\u201372 h en nevera y saca 1\u20132 h antes de usar).<br>5. Prepara la salsa mezclando tomate triturado, aceite, or\u00e9gano, ajo, az\u00facar y sal, y deja reposar mientras fermenta la masa (mejor sin cocer para estilo NY, as\u00ed mantiene frescura).<br>6. Precalienta el horno al m\u00e1ximo 250\u2013300 \u00b0C con piedra\/steel o bandeja invertida dentro durante 45\u201360 min (esto es clave para base crujiente y borde aireado).<br>7. Enharina ligeramente la mesa, vuelca la masa, desgasifica suave y forma un disco, dejando el borde m\u00e1s grueso; estira con manos hasta 30\u201335 cm (evita rodillo si quieres m\u00e1s aire en el borde).<br>8. Pasa la base a una pala con s\u00e9mola\/harina o a papel de horno, y comprueba que se desliza (si se pega, levanta un poco y a\u00f1ade m\u00e1s s\u00e9mola por debajo).<br>9. Extiende una capa fina de salsa dejando 1\u20132 cm de borde, a\u00f1ade la mozzarella uniforme y opcional parmesano y pepperoni (menos es m\u00e1s: demasiada salsa\/queso ablanda la porci\u00f3n y no se dobla bien).<br>10. Hornea 6\u201310 min sobre piedra\/steel hasta que el borde est\u00e9 dorado con manchas tostadas y el queso burbujee (si dora arriba antes de la base, baja un nivel; si falta color arriba, sube un nivel o gratina 30\u201360 s vigilando).<br>11.
