si usas 300 g, 3 yemas)<br>60\u201380 g de Pecorino Romano rallado (puedes mezclar con Parmigiano Reggiano si quieres un sabor m\u00e1s suave)<br>Pimienta negra reci\u00e9n molida (generosa)<br>Sal (solo para el agua de cocci\u00f3n)<br>Preparaci\u00f3n:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Ralla el queso y mezcla en un bol las yemas con el Pecorino (y Parmigiano si usas) y mucha pimienta negra hasta obtener una crema espesa; tip: no a\u00f1adas sal aqu\u00ed porque el queso y el guanciale ya aportan bastante.<\/li>\n\n\n\n<li>Pon a hervir una olla grande con agua y s\u00e1lala (que sepa \u201ca mar\u201d), porque es la \u00fanica sal principal del plato; tip: reserva una taza de agua caliente antes de escurrir para emulsionar al final.<\/li>\n\n\n\n<li>En una sart\u00e9n amplia a fuego medio, cocina el guanciale (o panceta) sin aceite hasta que suelte grasa y quede dorado y crujiente en los bordes; tip: si dora demasiado r\u00e1pido, baja el fuego para que la grasa se funda sin quemarse.<\/li>\n\n\n\n<li>Cuece la pasta al dente seg\u00fan el paquete (1\u20132 minutos menos de lo indicado) y reserva al menos 200\u2013250 ml del agua de cocci\u00f3n antes de escurrir; tip: el almid\u00f3n del agua es clave para que la salsa quede sedosa y no \u201chuevo revuelto\u201d.<\/li>\n\n\n\n<li>Apaga el fuego de la sart\u00e9n (important\u00edsimo) y a\u00f1ade la pasta escurrida al guanciale con su grasa, mezclando 20\u201330 segundos para que se impregne; tip: si la sart\u00e9n est\u00e1 muy caliente, espera un momento antes de seguir.<\/li>\n\n\n\n<li>A\u00f1ade la mezcla de yemas y queso y remueve en\u00e9rgicamente para emulsionar, agregando agua de cocci\u00f3n poco a poco hasta lograr una salsa cremosa que brille y cubra la pasta; tip: si notas que espesa de golpe, a\u00f1ade m\u00e1s agua caliente y mezcla sin parar.<\/li>\n\n\n\n<li>Prueba y ajusta solo con m\u00e1s pimienta y, si hiciera falta, un toque m\u00ednimo de sal, y sirve de inmediato con un poco m\u00e1s de queso por encima;
