Comenzar amasando: combinar el vino con la harina, luego la miel y el az\u00facar, por \u00faltimo agregar la manteca y continuar amasando.&nbsp;2. Si es necesario, agrega agua sin exagerar, la masa debe quedar bastante dura. D\u00e9jalo reposar en el frigor\u00edfico cubierto con film transparente.&nbsp;3. Mientras tanto, prepara el relleno: mezcla la ricota con el az\u00facar y luego agrega las chispas de chocolate.&nbsp;4. Coge la masa y empieza a extenderla con ayuda de un rodillo, div\u00eddela en partes y p\u00e1sala por la m\u00e1quina de pasta para que quede fina y d\u00f3blala sobre s\u00ed misma varias veces para crear burbujas durante la cocci\u00f3n.&nbsp;5. Cortar la masa finamente extendida en rect\u00e1ngulos y cerrar los cannoli, pincel\u00e1ndolos con un poco de huevo.&nbsp;6. Fre\u00edr los cannoli hasta que est\u00e9n dorados, dejar secar y enfriar sobre papel absorbente.&nbsp;7. Retirar el molde con cuidado y rellenar a mano con la ricota.&nbsp;8.
