Dorado, crujiente y de aroma inconfundible, se presta para consumir tanto como segundo plato, como para disfrutarlo junto al mar en compa\u00f1\u00eda de una buena copa de vino blanco, tanto como &lt; \/span><em>cuoppo<\/em>\u00a0para consumir, a la manera napolitana, dentro del\u00a0comida callejera\u00a0zepolina de mar,\u00a0bacalao&lt; a i=12>,\u00a0anchoas, pinzas de cangrejo, sepia y mucho m\u00e1s.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Prepararlo requiere algunas precauciones simples. En primer lugar, la&nbsp;<strong>elecci\u00f3n del pescado<\/strong>, que debe ser&nbsp;<strong>muy fresco<\/strong>&nbsp;y perfectamente limpio: la receta cl\u00e1sica utiliza bacalao, gambas (para fre\u00edr con toda la concha), anchoas, salmonetes, pulpitos y chipirones, pero tambi\u00e9n se puede preparar con otras especies de pescado. Ojo con los calamares: para mayor garant\u00eda de calidad, es mejor comprarlos enteros y luego obtener las cl\u00e1sicas anillas, que ya cortados.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Luego est\u00e1 el&nbsp;<strong>tipo de empanizado&nbsp;<\/strong>(y las muchas escuelas de pensamiento al respecto): hay quienes utilizan una masa preparada con harina y huevos, y alguna simplemente harina 00. Te sugerimos pasar el pescado por&nbsp;<strong>s\u00e9mola de trigo remolida<\/strong>&nbsp;<strong>durum<\/strong>&nbsp;y Hazlo muy r\u00e1pido: de esta forma la s\u00e9mola no se humedecer\u00e1, dejando la fritura seca y ligera. Alternativamente puedes utilizar<strong>harina de arroz<\/strong>, perfecta tambi\u00e9n para los intolerantes al gluten y con un rendimiento igualmente sabroso.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Y por \u00faltimo, pero no menos importante, est\u00e1 el<strong>aceite<\/strong>.\u00a0Para una fritura impecable\u00a0y que se deshaga en la boca, es imprescindible que contenga semillas (mejor si de girasol) y\u00a0<strong>temperatura adecuada<\/strong>, es decir, entre 175 y 180 \u00b0C. De hecho, con una temperatura demasiado baja, el pescado absorber\u00eda demasiado aceite, quedando blando y pesado, y con una temperatura demasiado alta, se quemar\u00eda y quedar\u00eda crudo por dentro. Si no tienes term\u00f3metro de cocina en casa, echa en la sart\u00e9n un poco de s\u00e9mola o un peque\u00f1o trozo de patata: si inmediatamente sube a la superficie y empieza a chisporrotear, el aceite est\u00e1 listo. Fre\u00edr unos cuantos trozos a la vez (para evitar que baje demasiado la temperatura) y, preferiblemente, del mismo tipo y cortados: diferentes especies de pescado requieren diferentes tiempos de cocci\u00f3n.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Una vez listo, se debe escurrir la fritura sobre una hoja<strong>papel de cocina absorbente<\/strong>, salar y servir, con un chorrito de jugo &lt; \/span&gt;, rigurosamente picante y al momento. Pero si quieres prepararlo con unas horas de antelaci\u00f3n o te sobra para el d\u00eda siguiente, puedes calentar el horno a 100\u00b0C, apagarlo y meter el pescado un m\u00e1ximo de 1 hora: de esta
